Ingredients for 4 servings:

2 pears
250 ml of water
120 g mascarpone
25 g pine nuts
3 tbsp forest honey
4 tbsp lemon juice

Preparation:

1. Put the lemon juice in a bowl with the water and stir.

2. Wash, core, halve the pears and soak in the lemon water
overnight.

3. Roast the pine nuts in a pan without adding any fat and
leave to cool.

4. Bring the pickled pears with 8 tablespoons of lemon water
and 3 tablespoons of forest honey to a boil in a saucepan and
cook over medium heat for about 3-4 minutes. Let the pears
cool in the brew for about 3 hours.

5. Stir the mascarpone until smooth and add 2 tablespoons to
dumplings on the plates, serve with pear stock and pine nuts.
