Ingredients : 

3 tablespoons vegetable oil
1 tablespoon minced garlic
1 large onion, chopped
1/4 cup chopped green bell pepper
1/4 cup chopped celery
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can whole peeled tomatoes, undrained and
chopped
1/2 (14.5 ounce) can diced tomatoes with green chile peppers
(such as RO*TEL ® )
salt and pepper to taste
5 pounds cooked and peeled whole crawfish tails

Direction : 

Put vegetable oil in a large saucepan and heat it over medium
heat. Mix in bell pepper, garlic, celery, and onion and cook for 10
minutes until the celery is tender and the onion is translucent. Stir
in chopped tomatoes together with their juice, diced tomatoes,
and tomato sauce. Season the mixture with salt and pepper to
taste. Boil the mixture over medium-high heat. Decrease the heat
and let it simmer for 30 minutes.

Mix in crawfish tails. Simmer for 5-10 minutes until hot.
