Ingredients : 

1 (16 ounce) package cooked and peeled whole crawfish tails
1/2 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped celery
1 1/2 teaspoons minced garlic
5 slices stale white bread, torn into pieces
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons Cajun seasoning
2 tablespoons chopped fresh parsley
3 tablespoons thinly sliced green onions
2 quarts vegetable oil for frying
1 1/2 cups dry bread crumbs
1 tablespoon Cajun seasoning

Direction : 

In a bowl of a food processor, combine chopped onion, egg, stale
bread, crawfish tails, bell pepper, garlic, and celery. Add 2 tsp. of
Cajun seasoning, salt, and black pepper. Cover the bowl and
pulse the mixture until finely chopped. Scrape the mixture into a
bowl. Fold in green onions and parsley. Cover the bowl and
refrigerate for 1 hour.

Put oil in a large saucepan or deep-fryer and heat it to 350 ° F
(175 ° C). In a bowl, whisk 1 tbsp. of Cajun seasoning and bread
crumbs. Set the mixture aside.

Shape the crawfish mixture into 1 tbsp.-size balls. Roll the balls
into the bread crumbs. Cook them in batches in hot oil for 4
minutes until the balls begin to float and turn golden brown. Let
them drain on a plate lined paper towel. Serve hot.
